Thanks to PE, yesterdays lunch was a success.TGIF. Started off by making Indian savory pancakes with potato filling (masala dosa) for breakfast. What can I say – I love Fridays.

For lunch, it was lentil stew with onions, carrots and spinach mildly spiced with ground coriander, turmeric and cayenne. To go with it some fresh, homemade Indian flatbread (paratha) with date and tamarind chutney. The chutney is sweet and sour and pairs well with savory dishes. She loves lentil stew and will eat it with rice or parathas. I am hoping that the swim lesson will make her sufficiently hungry to do justice to todays’  lunch.

Weekend’s here. I don’t have to think about her lunchbox for the next two days. Bliss!
