Ready for some guilt free snacking? When I found this recipe online, I was pretty sure it would taste like cardboard but was pleasantly surprised. I seasoned mine simply with some salt and pepper.

Peel potatoes. Slice them thinly (I used a mandolin slicer) and wash in cold water. Arrange on a greased microwave safe plate in a single layer. Microwave between 3-5 minutes until it starts turning golden brown. Remove as soon as they are done (use mitts while removing the plate from the microwave) and season with salt and pepper or cayenne. Grease the plate before cooking the next batch.

Tip: Do not start snacking as soon as each batch is done. Otherwise you’ll be left with nothing to show 🙂 as it takes move time to microwave the chips than to eat them ( say 10 seconds).
