Banana Bread

I promised to share this recipe with friends who sampled this yesterday and loved it. Great with tea or for hungry kids anytime.

Eggless Banana Bread recipe

4 over ripe bananas
1 1/2 cups flour (100% white or a combination of white and whole wheat flours 50:50)
3/4 cup sugar
1/4 t salt
1 t baking soda
4 T neutral flavored oil (like canola or sunflower)
1 t vanilla
1/2 cup applesauce or equal amount peeled and grated apple
Walnuts (optional) about 1/2 cup
Chocolate chips (optional; but divine when added)

1. Preheat oven to 180C. In a bowl, mash bananas. Add oil, vanilla and applesauce. Mix well.
2. Mix flours, sugar, salt, baking soda, walnuts and chocolate chips in a separate bowl.
3. Fold in the dry ingredients with the mashed banana mixture gently. Mix until just incorporated. Do NOT overmix. The batter will be thick. If it seems too dry, add more applesauce.
4. Transfer mixture to a greased bread pan and bake 45 minutes to 1 hr. Test for doneness by inserting a toothpick in the center. If it comes out clean, the bread is ready to come out of the oven. Sprinkle some cinnamon sugar on top if desired.

    I thought it was a regular cake(since nobody told me the name before)..but realized that it was made with banana’s when i actually saw them in my piece..loved it 🙂 amazing taste..thnx for sharing the secret recipe 😉 it can be made all year through :-)…shipra kuls
