Vegetarian Cannelloni without Ricotta

I have lost count of the number of times I buy random things at the grocery store. One such casualty was a box of cannelloni pasta. All vegetarian cannelloni recipes I had seen so far were heavy on ricotta cheese. Not being a big fan of ricotta, the box of cannelloni stayed on the shelfContinue reading “Vegetarian Cannelloni without Ricotta”

Let’s do that again!

I took a page out of my own book (blog in this case) and repeated monday’s lunchbox menu yesterday. Except this time I made curried potato with onions as the filling for the paratha (Indian whole wheat flatbread). This blog is proving to be a nifty tool as I can ensure that enough time has elapsedContinue reading “Let’s do that again!”

Vegetarian pizza

Everyone loves pizza. But to make it a healthy lunchbox item, I started making homemade pizza crust by using 50:50 ratio of whole wheat and All Purpose flours. Starting off with a healthier crust, I top the base with vegetables, baked beans and cheese. Vegetarian pizza went into her lunchbox on Thursday. Packed along with grapes and chocolate milk. Friday was aContinue reading “Vegetarian pizza”

Chole Tikki Chaat take 2

Chole Tikki Chaat is a mouthwatering sweet and spicy street food of India. It has mashed potato patties, topped with chole (curried chick peas), green and red chutneys and some finely diced onions. Green chutney is made with mint and coriander and red chutney has dates, tamarind and spices.   As I made this for Tuesday’s evening snack, I repurposed the leftoverContinue reading “Chole Tikki Chaat take 2”

Tuesday

In today’s lunchbox it is veggie burger with caramelized onions and red bell peppers, cheese and ketchup on the side. If you have been reading my earlier posts you must be wondering “what’s with the caramelized onions?” Well, it works for her as she doesn’t care for mustard or dressings. It adds flavor and moistureContinue reading “Tuesday”

Monday

Here’s a funny story. As my daughter has grossed herself out by taking PBJ sandwiches every other day of the week the previous year, just the mention of it yesterday night as a suggestion for her lunchbox sent her into a big Noooooooooooooo scream. After all, she reminded me, It’s PE day and I’ll be very hungry. PBJ’s willContinue reading “Monday”

Friday

Thanks to PE, yesterdays lunch was a success.TGIF. Started off by making Indian savory pancakes with potato filling (masala dosa) for breakfast. What can I say – I love Fridays. For lunch, it was lentil stew with onions, carrots and spinach mildly spiced with ground coriander, turmeric and cayenne. To go with it some fresh, homemade Indian flatbread (paratha) withContinue reading “Friday”

Thursday

Okay, yesterday’s lunch was quite successful. Most of it was eaten. I wonder why I didn’t get much sleep last night…..must be the excitement of creating this blog. Might as well enjoy the buzz while it lasts. Anyways, as I was up early, I decided to make crepes with Nutella for breakfast. I used oatContinue reading “Thursday”

Wednesday

Woke up with no ideas whatsoever for her lunchbox. Yesterday evening was busy as she had after school swim lessons and was in no mood to help her ever beleaguered mom. I was busy in the evening making dinner and packing lunch for my husband to take to work the next day. So I putContinue reading “Wednesday”
